Classic Minestrone Soup

Warm, tangy, spicy, and filling. This classic Italian soup combines vegetables, beans and pasta for it's hardy goodness.

This soup is hearty and will FEED a family of five, Plus a big man. and still have lunch for kids tomorrow. WOW, it smells great and I know my soups. though I did ass one yellow squash, tons of spices, and a mix of dried beans, did white beans other day in the White Chili which was Also a winner. But This, Is the BEST Ministrone soup! bravo!!!"

Ingredients

Are you making this? 
1 pound White beans; dried northern
1/2 cup Vegetable oil
5 slices Bacon; chopped
2 cloves Garlic; chopped
1 large Onion; chopped
4 medium Carrots; diced
6 stalks Celery; diced
8 ounces Plum tomatoes; (One can)
1/4 cup Basil; chopped, fresh
1 tablespoon Parsley; chopped, fresh
2 cup Potatoes; peeled & diced
4 medium Zucchini; diced
1/2 pound Green Beans; cut into 1/2" pieces
1 small Savoy cabbage; shredded
2 quarts Beef broth
1 cup Elbow Macaroni Noodles; or uncooked rice
1/2 cup Parmesan cheese; grated or shredded
1/2 teaspoon Pepper
1 dash Salt; to taste

Servings  

Preparation

Cover washed beans with water; soak overnight.

In a small skillet, cook oil, bacon, garlic and onion over medium heat for 10 minutes, stirring occasionally. Drain beans and put into a large pot; add bacon-onion mixture, carrots, celery, tomatoes and juice, basil, parsley, potatoes, zucchini, green beans, cabbage and broth; cover and simmer 4 hours. Add the macaroni (or rice) about 1 hour before serving

Before serving, add pepper and salt then top with Parmesan cheese.

Serve with a good Italian or garlic bread.

OPTIONS:

Spinach or Swiss chard can be substituted for cabbage.

Canned beans can be substituted for dried or fresh beans.

Add chunks of browned Italian sausage for a more robust version

Drop the bacon and use vegetable broth for a vegetarian version

Notes

A small bowl makes a great start to an Italian meal. A large bowl can be a meal all by itself.

Great taste but the servings are off. I followed this recipe exactly except I left out the carrots, used 1/2 the beans and half the celery. And in the end, I have TWO huge pots of soup cooking. I had to double the broth to cover the produce, and I'm going to have to freeze at least half of the soup for a later time. There are probably 24 servings here. Good thing it tastes delicious!

Wasn't crazy about this nor were my kids. It may have been us but it just didn't win us over. I didn't like the pasta in it and the cabbage turned a very unappealing color. Oh well, Next time

Great soup! Very thick. I like my minestrone a little soupier so added an extra quart of stock but everything else was perfect. Will save to my favorites!

Loved this soup! Get out your biggest stock pot cause it makes A LOT! I used both spinach and kale instead of cabbage. Also used 1# of Italian sausage in addition to the bacon. Cooked the noodles separately then added. Will definitely make this again!
