4 3/8" thickboneless pork chops
1 teaspoonVegetable oil
1 8-oz jarplum preserves
2 teaspoonsdry ginger; ground (OR 1 Tablespoon grated fresh ginger)
3 tablespoonsCider vinegar

Ginger-Plum Pork Chops Preparation

Heat oil in large nonstick skillet over medium-high heat. Brown chops on one side, turn; stir together remaining ingredients and add to skillet. Cover skillet, lower heat and simmer 5 minutes.
