Heat olive oil in a large saucepan over medium heat. Cook onion, sweet pepper and garlic in hot oil about 5 minutes or until tender. Stir in undrained stewed tomatoes, chicken broth, ham and Cajun seasoning.
Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Stir in rice. Remove from heat. Cover and let stand about 5 minutes or until rice is tender.

Buddercup 3 years agoI liked it. Husband found it bland. He added hot sauce and cajun spice at the table. He seemed to like it after that.
moosedrool 3 years agoThe more Cajun spice is a good suggestion. I'd suggest making a little extra - the flavors are a taste celebration with leftovers.
rodq 3 years agoThis dish was very good but I have a couple suggestions: add more Cajun spice if you truly desire a Cajun dish. Add four cups of pre cooked rice instead of cooking the rice in the pan.
