Original recipe makes 4
1.5 cupsham; cubed
1 tablespoonolive oil
1 cupOnions; chopped
3/4 cupgreen sweet pepper; chopped
1 teaspoongarlic; (2 cloves) minced
1 14.5-oz canstewed tomatoes
1 14-oz canreduced-sodium chicken broth
1 teaspoonCajun seasoning
1.5 cupsquick-cooking rice

Ham Jambalaya Preparation

Heat olive oil in a large saucepan over medium heat. Cook onion, sweet pepper and garlic in hot oil about 5 minutes or until tender. Stir in undrained stewed tomatoes, chicken broth, ham and Cajun seasoning.

Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Stir in rice. Remove from heat. Cover and let stand about 5 minutes or until rice is tender.

I liked it.

Husband found it bland. He added hot sauce and cajun spice at the table. He seemed to like it after that.

The more Cajun spice is a good suggestion. I'd suggest making a little extra - the flavors are a taste celebration with leftovers.

This dish was very good but I have a couple suggestions: add more Cajun spice if you truly desire a Cajun dish. Add four cups of pre cooked rice instead of cooking the rice in the pan.
