Leftovers from Peppered Pork Roast combine with this Greek-flavored pasta salad. Serve with sesame seed dinner rolls for a simple supper or lunch.

Original recipe makes 4
3/4 poundcooked Peppered Pork Roast; cut into thin strips
12 ouncespenne or ziti pasta; cooked and drained
1 smallcucumber; diced
6 ouncesfeta cheese; crumbled
1 cupcherry tomatoes; halved
1/2 cupfresh mint leaves; chopped
1/2 cupGreek vinaigrette dressing

Mediterranean Pasta Salad Preparation

In large bowl, gently toss all ingredients with dressing. Serve on shallow salad bowls or dinner plates.
