1 smallonion; thinly sliced
2 cupscoleslaw mix with carrots
1 teaspoonolive oil
3 tablespoonsSoy sauce

1 tablespoonHoney
2 teaspoonsGround coriander
1/2 teaspooncrushed red pepper flakes
4 10flour tortillas; warmed

Thai Pork Burritos Preparation

Heat large nonstick skillet over high heat. Add pork, cook, crumble and stir until pork is no longer pink, about 3-4 minutes. Add ginger, garlic, onion and coleslaw mix and stir-fry with pork for 2 minutes, until vegetables are wilted. Stir constantly to blend all ingredients well, about 1 minute. Spoon equal portions of mixture onto warm tortillas, garnish with cilantro, roll up to encase filling and serve.

This dish was fairly intensive with the soy and ginger, but overall very good. Even my picky husband liked it, although he requested less ginger next time. Some of the instructions are missing - need to include when to add the soy mixture.
