Texas-style Beef Sushi

Here's a twist for those who want something trendy but aren't up for sashimi.

Original recipe makes 20
-- Filling --
1 1/2 cupsSushi rice
2 cupsWater
3 tablespoonsRice vinegar
1 teaspoonSugar
1 teaspoonCumin
3 tablespoonsFresh Parsley; Minced
3 tablespoonsFresh cilantro; Minced
salt and pepper; to taste
1/2 cupMonterey Jack Cheese; Grated
-- Sushi Wrap --
1 poundroast beef; Rare, sliced inch thick
1 cupRefried black beans
1/2 teaspoonCumin
1 mediumGreen bell pepper; cut into thin lengthwise strips
1 mediumRed bell pepper; cut into thin lengthwise strips
2 cupsPrepared salsa; for dipping
Fresh chives; for tying sushi if desired

Texas-style Beef Sushi Preparation

Cook rice with water until all liquid is absorbed. In a small saucepan, combine the vinegar, sugar, and cumin. Boil and stir until sugar is dissolved. Stir into cooked hot rice, allow mixture to be absorbed. Let rice cool completely. Stir in parsley, cilantro, salt, pepper and cheese. Set aside.

Lay out beef slices to form a large rextangle on a bamboo rolling mat. . Stir cumin into refried beans and spread in a thin layer on each beef slice. Top with some of the rice filling. Place strips of peppers vertically across rice; roll up jellyroll-style. Trim peppers evenly with edges of beef.

Refrigerate rolls until firm. Cut each roll into 1-inch slices. Tie with a chive if desired. Serve with salsa.

Notes

You can also use some Chipotle Mayo and cut back on the cheese. I also make it with sliced smoked turkey and Wasabi Mayo for a different taste.

    Very delicious...I really like this twist on 'sushi'. I have yet to try it with the chipotle mayo but I think this would be a good addition as I tend to like things spicy. I wonder if half cheese, half chipotle mayo would be a good thing? I was also thinking about adding a dash of hot sauce to each roll when they're done....
