Spicy shrimp, hot potatoes, and tender corn. What's not to like?

"I toss the carrots in at the same time as the potatoes - otherwise they're a little crunchy. I also add the onions early for flavor too. The ingredients seemed kind of approximate - esp. the spices. I doubled all of the spice's amounts and still could have used more. I think the size of the pot and the amount of water makes a huge difference. The original recipe (Chef Rick) says add the amount of shrimp (in the recipe) per person, so that's what I did. Both times I cooked this recipe, people raved and KEPT EATING! It's really good. Original recipe makes 1 Serving
1/2 lb.Large shrimp; (10 - 15 count), in shell
3 Red bliss potatoes; 3 per person
1 earCorn; 1 ear per person, cut in half
2 mediumLemon; cut in quarters
1/4 teaspoonCayenne; pepper
1/8 teaspoonCloves; ground
1/2 cloveGarlic
1/2 Bay leaf
1/2 teaspoonOld Bay Seasoning
1/2 teaspoonBlack pepper; - coarse ground
2 dashesTabasco; as required
-- OPTIONAL --
1/2 lb.Keilbasa; (or all meat hot dog)
2 smallOnions; 2 per person
1 Carrot; cut into 4ths per person
1 Crabs; (up to 2 per person)

Cajun Country Shrimp Boil Preparation

Boil water in a large kettle on stove or outdoor cooker. Season water with salt and your choice of above flavorings along with the juice of two lemons or 2 tablespoons of vinegar. Add potatoes and cook for 10 minutes. Add carrots, sausage and onions. Bring back to a boil. When potatoes and carrots are almost tender, add corn and crabs. Bring to a boil, then add shrimp. Cook a few minutes until shrimp are just done - they will be pink in color. Drain and pour into a basket or onto platters. Have cocktail sauce and Dijon mustard at hand.

    Finish vegies put in ice chest kick water up to a rolling boil doesnt matter how much water then turn fire down a bit a slow roll put shrimp in for rite at about a minute pull out water steam for thirty sec no meat left in the shell

    This was a fun recipe to do and very easy. I had to adjust according to the number of people we expected for dinner. I used 1 gal. H20 for ea. 6 people and multiplied all ingredients by # of people. I used 1.5 tsp of salt & 1 lemon / gal. water. I don't care for Tabasco so used Tapati'o Salsa Picante 2 dashes/person. I used the main recipe plus everything optional.

    This is a fantastic recipe I've made a half-dozen times. The only hard part for me has been making sure the potatoes are boiled long enough as they take longer than any of the other ingredients. I always add a variety of sausage. This recipe really wows the crowds, and is easy to make.

    Wonderful. I added some extra Old bay and Tabasco. I also added 2 small jars of whole mushrooms, they absorbed the seasoning and were great. I used all optional ingredients except crab.
