1. Place tomatoes, mushrooms, garlic and salt into a large bowl and toss. Let stand 1 hour to form juices
2. Cook pasta as directed
3. Add basil, cheese, vinegar and olive oil to tomato mixture. Mix well
4. Toss hot pasta in the sauce. Season to taste with salt & pepper. (& pine nuts if desired)
Serving suggestion: Cheesey garlic bread and asparagus

cedarwaxwing 7 years agoI actually heated up the tomato mixture since I was serving this as a main course. It worked well, the cheese melting to smooth lumps of deliciousness.

cedarwaxwing 7 years agoIs it possible to make this with fresh mushrooms? It sounds great, but I have an aversion to canned mushrooms.
