Pumpkin Cheesecake
Original recipe makes 1
| 1 8-oz packagecream cheese; room temperature |
| 3/4 16-oz canpumpkin |
| 1/4 16-oz canpumpkin |
| 1/2 cupBrown sugar |
| 1 teaspoonVanilla |
| 2 wholeEggs |
| 2 cupsCool Whip |
| 1 1/2 teaspoonpumpkin pie spices |
| 1 8"Ready pie crust; or graham cracker crust |
Pumpkin Cheesecake Preparation
Soften cream cheese to room temp. Thoroughly combine cream cheese, 3/4 can pumpkin, brown sugar, vanilla and spices. Slowly add eggs to mixuture. Beat well. Pour into crust. Bake at 350F for 30 to 40 minutes or until center is set. Cool on rack one hour. Blend together 1/4 can pumpkin and Cool Whip. Spoon on top of pie. Chill several hours.
