Soften cream cheese to room temp. Thoroughly combine cream cheese, 3/4 can pumpkin, brown sugar, vanilla and spices. Slowly add eggs to mixuture. Beat well. Pour into crust. Bake at 350F for 30 to 40 minutes or until center is set. Cool on rack one hour. Blend together 1/4 can pumpkin and Cool Whip. Spoon on top of pie. Chill several hours.

SonyaN 2 years agoI gave this a low rating not because it was a bad recipe but because I was really looking for a cheesecake. This recipe was more like an enhanced pumpkin pie rather than a cheesecake. But do not dismay, the family likes pumpkin pie so it disappeared.
