| 1 poundTURKEY CUTLETS; cut into 1/2-inch strips | |
| 1/4 cupGreen onions; thinly sliced | |
| 1 teaspoonfresh ginger; minced | |
| 1 teaspoonCumin | |
| 1/2 teaspoonCoriander | |
| 1/2 teaspoonBlack pepper | |
| 1/2 teaspoonSalt | |
| 1.5 poundssmall new potatoes; cut into 1-inch cubes | |
| 2 teaspoonsolive oil | |
| 2 Roma tomatoes; seeded and cut into 1-inch cubes | |
| 1 8-oz canchick peas; drained and rinsed | |
| 1/4 cupcilantro; chopped |
Gingered Turkey with Potatoes and Chick Peas Preparation
1. In small bowl, combine turkey strips, green onions, ginger, cumin, coriander, pepper and salt. Set aside while preparing other ingredients.
2. Boil potatoes for about 10 minutes or until just tender; drain.
3. In 12-inch nonstick skillet, heat oil; add turkey strips; saute for 5 to 6 minutes or until no longer pink.
4. Toss in potatoes, chick peas, tomatoes and cilantro; heat for about 1 minute and serve.
