Turkey Breast with Honey-Mustard Glaze

"This was so easy and the end result was fantastic!! My husband and our 1 1/2 year old triplets didn't want to stop eating! I seasoned my turkey with garlic salt and a cajun blend seasoning; and also added a tsp minced garlic and 1/2 of a green onion minced to the honey and mustard for basting. I placed the breast on a bed of chopped celery, carrots, and the other 1/2 of the green onion then added maybe 1/2 cup water to the pan right before popping iit in the oven!thanks for the awesome inspiration this is a deffinate keeper!!"

4 poundTURKEY BREAST; fresh or thawed
1/2 TeaspoonKosher salt
1/4 TeaspoonBlack Pepper; freshly ground
1/4 CupHoney
2 TablespoonsDijon-style mustard

Turkey Breast with Honey-Mustard Glaze Preparation

1. Season interior and exterior of turkey breast with salt and pepper.

2. In (13 x 9 x 2 inch) roasting pan, place turkey breast on a V-shaped rack. Roast, uncovered, in a 325 degree F preheated oven for 1-1/2 to 2-1/4 hours or until meat thermometer registers 170 degrees F in the deepest part of breast.

3. Meanwhile, in a small bowl, combine honey and mustard. Brush glaze over breast during final 20 minutes of cooking.

4. Remove from oven and allow turkey breast to stand for 10 minutes before carving.
