Original recipe makes 8
10 ouncesfresh spinach; washed, well drained & stems removed
1 poundSMOKED TURKEY BREAST; cut into thin strips
1 10.5-oz canMandarin orange slices; well drained
1 cupred onion; very thinly sliced
1/2 cupsalted dry roasted peanuts
1/2 cupGolden raisins
1/4 cupolive oil
1 tablespoonWhite wine vinegar
1 tablespoonmango chutney
3/4 teaspoonCurry powder
3/4 teaspoonDry mustard
1/2 teaspoonSalt

Turkey Spinach Salad Preparation

1. Tear spinach leaves into bite-sized pieces.

2. In large bowl, combine spinach, turkey, orange and onion slices, peanuts and raisins. Cover and chill until serving time.

3. In 1 cup measure, combine olive oil, vinegar, chutney, curry powder, mustard and salt. Cover and hold at room temperature.

4. Just before serving, pour dressing over salad, tossing to coat.
