Original recipe makes 4
1 PoundGround turkey
1/2 Cupinstant rice
1/2 Cupcarrots; grated
1/4 CupOnion; chopped
3 TablespoonsParsley; chopped
1 clovegarlic; (up to 2 Cloves), minced
1 Teaspoondried oregano leaves
1/2 Teaspoonsalt and pepper
1 8-oz cantomato sauce
2 Largegreen peppers

Turkey Stuffed Green Peppers Preparation

1. In a medium bowl combine turkey, rice, carrot, onion, parsley, garlic, oregano, salt, pepper and tomato sauce. Mix to blend thoroughly.

2. Cut each pepper in half lengthwise. Remove and discard seeds and membranes.

3. Divide turkey mixture between peppers. Place in a baking dish and cover.

4. Bake in a preheated 350 degree F oven for about 1 hour, or until the internal temperature reaches 165 degrees F and the peppers are tender.

I used very lean turkey and it came out a bit dry, I will use more tomato sauce next time. Overall very enjoyable meal. Hubby, 7 year old, and 10 month old loved it!

Loved that it was so easy to make, but really tasty. I substituted yellow peppers instead of rice to cut back on the carbs, and it worked out just great.
