"I didn't have any brandy, so substituted bourbon instead. While I don't know if brandy would have kicked up the taste a bit, I thought the marinade was weak. The marinade did help put a nice brown coating on the chicken when cooked. The beauty of this recipe is the time factor. After marinating from one hour to the next day, it takes no more than 12 to 15 minutes to cook the chicken, and in our busy lives, that in itself deserves a star or two. Honey Brandy Chicken Preparation

Also good for barbecues.

1. Mix honey and brandy until combined

2. Arrange chicken in a flat container and pour marinade over.

3. Cover and place in refrigerator for 1 hour or overnight.

4. Fry or grill chicken as normal.

Serve with salad or vegetables

I think its a simple and great recipe. The only thing is, I would not recommend marinating chicken for more than 3 to 4 hours as the protein begins to break down substantially. This does result in more tender meat but well, I eat chicken for its protein.
