Cilantro-Mint Chutney

Original recipe makes 1
1 freshjalapeno; seeded and minced
2 clovesGarlic; minced
1/2 cupraw cashews
1 1/2 cupsFresh mint leaves
1 1/2 cupsFresh cilantro leaves
1/3 cupFresh lime juice
1/4 cupWater
1 tablespoonnatural cane sugar
2 teaspoonsGround coriander
1/4 teaspoonSalt

Cilantro-Mint Chutney Preparation

To make in a food processor, drop jalapeno and garlic cloves into a running food processor to chop. Add the cashews and process for a minute or so. Add mint and cilantro. With machine running, pour in lime juice and water. Add sugar, coriander and salt and process until mixed.

This will keep a week in the refrigerator. Or you can put it in an ice cube tray and freeze it. Then store the frozen "cubes" in an air tight freezer container. A few moments in the microwave thaws out a cube for serving with a meal.

Was definately more of a pesto than a chutney, but it was very good. Used it on Lamb burgers and it went over very well!

OMG! I GET EXCITED EVERYTIME I CAN USE A LOT OF HERBS I GROW IN MY HERB GARDEN. I HAVE A LOT OF MINT, CILANTRO WHICH GROWS VERY WELL IN ZONE 9. I LOVE TO MIX CILANTRO AND MINT TOGETHER. THE CASHEWS MAKE IT LIKE A PESTO, WHICH I ABSOLUTELY LOVE AND CAN NOT WAIT TO TRY THIS. THANKS FOR SHARING!
