A tasty muffin packed with shredded carrots and apples, raisins, nuts, and coconut. An energizing way to start the day!

"Loved, loved, loved these!! I substituded 1/2 cup sugar for 1/2 cup applesauce to reduce sugar content. Then, instead of raisins, I put dried cranberries, and instead of nuts I put roasted pumpkin seeds!! Absolutely amazing and SO SO hearty & healthy! Thanks for great new addition to my morning routine!"

2 cupsAll-purpose flour
1 cupSugar
2 tspBaking Powder
2 tspGround cinnamon
1/2 tspBaking soda
1/4 tspSalt
2 cupsCarrots; finely shredded
1 cupApples; finely shredded
1/2 cupRaisins
1/2 cupNuts; chopped
1/2 cupShredded coconut
3 Eggs
3/4 cupCooking oil
2 tspVanilla

Morning Glory Muffins Preparation

Preheat oven to 350 degrees F. Grease 18 - 2-1/2" muffin cups or line them with paper bake cups.

In a large mixing bowl, stir together the flour, sugar, baking powder, cinnamon, baking soda, and salt. Stir in the carrots, apples, raisins, nuts, and coconut.

In a seperate bowl, stir together the eggs, cooking oil, and vanilla. Add the liquid ingredients all at once to the flour mixture and stir just until moistened.

Gently spoon the batter into the muffin cups until each one is almost full. Bake in the 350 degree oven about 30 minutes or until the top of a muffin springs back when lightly touched. Cool in the pan on a wire rack for 10 minutes. Remove the muffins from the pan and cool on the rack. Serve warm or at room temperature.

For something different, try substituting shredded zucchini for all or part of the shredded carrots.

Just finished making the batter and off into oven. Used red delicious apples, large carrots, one banana chunked and a can of crushed pineapple. I don't have muffin pans at the ready so I'm using a brownie pan. Topped the batter with coconut and simisweet chips. Wish me luck :)

This recipe is fail proof! I add at least an additional 2 cups of stuff, dried cranberries, pumpkin seeds, pine nuts, bran flakes, multigrain cereal, orange zest etc, swap 1/2 flour to whole wheat, cut the sugar to 2/3 cup & increase liquids to 2 cups by adding applesauce. They are still great!

Fresh out of the oven & very tasty...added 1/4C more of flour & increased oven temp to 375 for high altitude. Batter seemed dry so added 1/4C Apple Juice. Will be making these again-yummy!
