3 cupsBosc pears; peeled and chopped (about 3)
1/4 cupAmaretto
1 tablespoonSugar
1 cupGingersnap crumbs; crushed (about 4 oz)
3 cupsLow-fat vanilla frozen yogurt; softened
1/2 cupAlmond Slices; toasted

Amaretto-Scented Pear Parfaits with Gingersnaps Preparation

1. Combine first 3 ingredients; cover and chill at least 1 hour.

2. Spoon 1 tablespoon cookie crumbs into each of 8 (8-ounce) glasses; top each with 3 tablespoons pear mixture and 3 tablespoons yogurt. Repeat layers once, ending with the yogurt. Top each with 1 tablespoon almonds.
