Let the peaches and sugar stand at room temperature 30 minutes to produce the greatest amount of juice. With perfectly ripe peaches, a potato masher will coarsely chop or mash the fruit just as well as a food processor.

"Tasty, of course, since its hard to go wrong with these ingredients. However with my frozen canister-sytle ice cream maker this came out with a fairly icy texture. I think this was largely due to the high ratio of frozen fruit to cream. In the future, I'd make a puree of the fruit and cream to see if I can get a smoother texture." - modland

6 cupsPeaches; sliced and peeled
3/4 cupSugar
2 cupsHalf-and-half cream
1 1/2 teaspoonsVanilla extract
1/4 teaspoonSalt

Simple Peach Ice Cream Preparation

1. Combine peaches and sugar in a large bowl. Let stand 30 minutes, stirring occasionally. Place peach mixture in a food processor; pulse 10 times or until coarsely chopped. Return peach mixture to bowl; stir in half and half, vanilla and salt.

2. Pour mixture into the freezer can of an ice cream freezer; freeze according to manufacturer's instructions. Spoon ice cream into a freezer-safe container; cover and freeze 1 hour or until firm.
