Mix chicken, celery, lemon juice, cayenne, onion, parsley and soup
until well blended. Season with salt and pepper to taste. Cover with
foil and refrigerate until chilled.
Form into small, slightly flattened cylinders, about 3 inches long.
Dip into eggs and roll in crumbs. Set to dry on waxed paper. Heat 3
inches of oil in heavy pot until medium hot -- 360 degrees. Add the
croquettes, let brown, turn, then brown on other side. Don't crowd
the pot. Drain on paper towels. Place on warm platter and serve with
gravy if desired.
