If you enjoy Tex-Mex this is Incredible!

"Very tasty and easy. I cut the recipe in half, but only used 3 tortillas to layer the bottom of a 8x8 dish. I used Morning Star meal starter instead of beef or turkey because i had it in the freezer and it's super quick to heat up (no defrosting or browning). I topped the casserole with some spring salad mix and tomatoes. Next time, I will definitely add a layer of low fat refried beans; it would make this dish to die for. Also, maybe add some veggies in there, maybe some corn or even squashes..." - pineapplebutter

1 poundGround beef or pork
3/4 cupWater
1 packageMcCormick original taco seasoning; (1.25 oz.)
1 teaspoonGarlic powder; (up to 3 teaspoon)
2 cupsSharp cheddar cheese; shredded
1 cupOnion or sliced green onion; chopped
12 6-inchCorn tortillas
4 cupsLettuce; shredded
2 mediumTomatoes; chopped
4 tablespoonsSour cream; (optional)
2 cupscottage cheese

Layered Taco Casserole Preparation

Preheat oven to 350 degrees.

Lightly coat a 13 x 9 x 2 baking pan with nonstick cooking spray; set aside.

In large skillet cook meat until brown. Drain fat. Stir in water, taco seasoning and garlic powder. Bring to a boil; reduce heat. Simmer, uncovered, about 5 minutes or to desired consistency; set aside.

In mixing bowl combine cottage cheese, cheddar cheese and onion.

Place 6 tortillas in prepared pan. Top with half of the meat and dollop with half of the cheese mixture. Repeat layers. Bake, uncovered for 40 to 45 minutes or until heated through.

Top with lettuce and tomatoes. Serve with sour cream, if desired.

    I put salsa on the bottom before the tortilla and I used 4instead. I cooked the onions in my meat and I used grounded turkey meat instead along w taco seasoning.and I also used flour tortilla instead and I added diced tomatos in between layers.and 25m n da oven the kids loved it

    The taste was a bit bland. Any number of additions would help spice it up! It will serve as a great base meal and our family will tweak it to our liking:)
