Layered Taco Casserole
If you enjoy Tex-Mex this is Incredible!"Very tasty and easy. I cut the recipe in half, but only used 3 tortillas to layer the bottom of a 8x8 dish. I used Morning Star meal starter instead of beef or turkey because i had it in the freezer and it's super quick to heat up (no defrosting or browning). I topped the casserole with some spring salad mix and tomatoes. Next time, I will definitely add a layer of low fat refried beans; it would make this dish to die for. Also, maybe add some veggies in there, maybe some corn or even squashes..." - pineapplebutter
