| 1 cupWater |
| 1 16-oz packagefrozen cauliflower and broccoli; flowerettes thawed |
| 4 tablespoonolive oil |
| 2 tablespoonGarlic; minced |
| 1/2 teaspoonBlack pepper |
| 1/2 teaspoonSalt |
| 1 poundmedium shrimp; fresh or frozen, thaw; peeled, deveined |
| parmesan cheese; shredded |
Garlic Shrimp with Pasta Preparation
Cook the pasta according to package directions. Set aside.
Meanwhile, in a 12 inch skillet bring 1 cup of water to a boil. Add
cauliflower and broccoli. Cover and simmer 5 minutes until crisp-tender. Drain and set aside.
In same skillet heat 2 tablespoons of the oil over medium high heat. Add garlic, pepper and salt. Cook and stir for 1 minute. Add shrimp; cook and stir about 3 minutes more or until shrimp turn opaque. Stir in
cauliflower and broccoli; heat through.
Drain pasta; toss with remaining 2 tablespoons oil. Add shrimp mixture.
Sprinkle each serving with Parmesan cheese, if desired.
