Terrific, flavorful coffee cake! A favorite at my house.
"I have been looking for a cake with a certain texture for the last week and this one has made the cut. It was so moist and the texture was excellent. My little girls and myself ate some before it even cooled lol. I would like to make it with the blueberries again but with lemon extract and minus the cinnamon. I am soooo very glad I found this one because it was just what my taste buds was looking for! I will make again this week for sure. Oh forgot to say I used smaller pans than called for. Preheat oven to 350 degrees. Lightly grease a 13 x 9 x 2 inch baking pan; set aside.
In small bowl stir together flour, baking powder and salt; set aside.
In a large bowl beat cream cheese and butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 2 cups sugar; beat until combined. Add eggs, 1 at a time, beating well. Add flour mixture; beat until combined. Stir in vanilla. Gradually fold in blueberries.
Batter will be very thick. Pour into prepared pan and smooth the top.
In small bowl stir together 3 tablespoons sugar and the cinnamon. Sprinkle over batter.
Bake for 50 to 60 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.

rickgoranson 4 months agoMade it again !! Only this time, I made it with.....1/2 Blueberries and 1/2 Raspberries. It added a nice tartness with the sweet. Man was it good !!!!

BerryGal00 5 months agoFabulous coffee cake recipe; very versatile. I made it true to the original recipe the first time, to rave reviews. The second time I switched out the cinnamon for crystallized ginger and the blueberries for rhubarb; it was equally a hit with everyone. I think the key is that the basic batter is just about perfect. I'm going to try it with fresh apples, cinnamon and nutmeg next time. My ONLY change would be to make a more substantial crumble topping, which I did each time I make this coffee cake.
