1/2 tablespoonolive oil
1 mediumOnion; chopped
1 cloveGarlic; minced
1 cupEvaporated skim milk
2 ouncesChevre
2 ouncesSmoked salmon
1 packageFrozen spinach; (300g) thawed and heated
250 gramsFettucine; cooked and drained

Spinach and Smoked Salmon Fettucine Preparation

In a large nonstick skillet, heat butter and olive oil. Add onion and garlic and cook until onion is soft. Add evaporated milk and cheese and cook on low stirring constantly, until cheese is melted. Add spinach and salmon; stir to combine until salmon is heated through. Add pasta and toss lightly.

Notes

Original recipe calls for 2 ounces of cheddar cheese and no smoked salmon.

    Goat cheese wasn't available so I went with Feta cheese, also I added capers and did a white wine reduction with the sauce - one of the best meals we've had in a long time!

    I liked this recipe. I didn't have all the ingredients handy so I substituted Gournay cheese for the Chevre, regular salmon and liquid smoke for the smoked salmon. It still came out very tasty.
