Ingredients

1/2 tablespoon Butter
1/2 tablespoon olive oil
1 medium Onion; chopped
1 clove Garlic; minced
1 cup Evaporated skim milk
2 ounces Chevre
2 ounces Smoked salmon
1 package Frozen spinach; (300g) thawed and heated
250 grams Fettucine; cooked and drained

Preparation

In a large nonstick skillet, heat butter and olive oil. Add onion and garlic and cook until onion is soft. Add evaporated milk and cheese and cook on low stirring constantly, until cheese is melted. Add spinach and salmon; stir to combine until salmon is heated through. Add pasta and toss lightly.

Notes

Original recipe calls for 2 ounces of cheddar cheese and no smoked salmon.

Very tasty... I would recommend 2 oz more smoked salmon... Loved the taste.

I cheated and just used pre made Alfredo sauce and added spinach and smoked salmon. Super yummy!

Goat cheese wasn't available so I went with Feta cheese, also I added capers and did a white wine reduction with the sauce - one of the best meals we've had in a long time!
