In a large nonstick skillet, heat butter and olive oil. Add onion and garlic and cook until onion is soft. Add evaporated milk and cheese and cook on low stirring constantly, until cheese is melted. Add spinach and salmon; stir to combine until salmon is heated through. Add pasta and toss lightly.
Original recipe calls for 2 ounces of cheddar cheese and no smoked salmon.

donisflying 3 years agoGoat cheese wasn't available so I went with Feta cheese, also I added capers and did a white wine reduction with the sauce - one of the best meals we've had in a long time!
