Gnocchi with Mushroom Sauce

Based on a recipe from www.eateathurrah.com which includes instructions for making the gnocchi as well. I use purchased gnocchi and it always amazes me how delicious the sauce is given how few ingredients it has!

Original recipe makes 3
1 tablespoonolive oil
1 cloveGarlic
1 cupPortabella Mushrooms; sliced
1/2 cupWhite wine
14 ouncestomatoes; Diced
1/4 cupParsley; chopped
1 450g packagePotato gnocchi; cooked according to package directions

Gnocchi with Mushroom Sauce Preparation

Heat olive oil over medium heat. Add the garlic and mushrooms and saute gently - be careful not to cook the mushrooms too quickly! Once the mushrooms are soft, add a little salt and pepper and the wine.

Cook until liquid evaporates and then add the tomatoes. Cook for about 15 minutes more until sauce is thickened. Be sure to drain the gnocchi well before adding them to the sauce. Top with fresh chopped parsley and some freshly grated parmesan cheese.

    I doubled up on the mushrooms because we love them so, and were impressed by this luscious side. Beautiful as well, it was vvery much enjoyed by all.

    Good dish, but I found it nothing special. Just a regular week day tomato mushroom sauce. Perhaps I might just not be a big fan of gnocchis. 3 1/2 stars

    Loved this and was easy to make. I used red wine because that is what I had on hand and probably used more than one cup of mushrooms. Great vegetarian main dish

    I made this recipe about 2 weeks ago and I'm ready to make it again! My kids loved it, even though they say they won't eat tomatoes, they said they'd eat this again! This is a great quick and easy recipe and meat, fish or meat alternative could easily be added.

    Attempted on January 7, 2010. Simple ingredients, easy preparation, and stunning results. Looked beautiful on the plate! I added a splash of balsamic vinegar to this recipe while sauteeing the mushrooms.
