Fresh Corn Frittata and Smoked Mozzarella
Recipes » Breakfast » Egg Dishes
Easy to double and simple to prepare, this open-faced omelet is a good light main course. Smoked cheese is a fitting counterpoint to the sweet, fresh corn.
"I would give this recipe a 5 star rating easily. I used eggbeaters and egg whites to prepare to avoid extra cholesterol and it was delicious! We had it for dinner but I would definitely consider for that special breakfast. It was easy to prepare in no time at all." - susan357Yield: 4 Ready in 45 minutes
