Great muffins

"This banana bread/muffin recipe is great! I chose to make it into loafs instead, because I couldn''t find the muffin tins I wanted to use, but the results were excellent. My family went hog wild on these and almost all of what I made was gone in one sitting! My kids are BIG banana eaters, so I am constantly buying large amounts of bananas. there are many times I over estimate the amount I need for them, and some start overly ripening. This was a great way to salvage those sweet bananas when they have become to ripe for them to eat. Thank you!" - MysticalStar

1 1/2 cupsAll purpose flour
1 teaspoonBaking soda
1 teaspoonBaking Powder
1/2 teaspoonSalt
3 largeripe bananas; mashed
3/4 cupSugar
1 wholeEgg; lightly beaten
1/3 cupButter; melted
TOPPING
1/3 cupBrown sugar
1 tablespoonAll purpose flour
1/8 teaspoonGround cinnamon
1 tablespoonButter

Banana Crumb Muffins Preparation

In large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients, just until moistened. Fill greased or paper line muffin cups 3/4 full. Combine 1st three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375F for 18-20 minutes or until test done. Cool in pan 10 minutes before removing.

    Hot out of the oven and they are delicious. Will definitely make again. Added a tsp of vanilla and some cinnamon to batter. Would really be good with walnuts also!!!!

    It was yummy! Maybe I'd try the recipe again I found it to be a bit heavy but fluffy,I did reduce the sugar its just sweet enough. Also I added a tsp of vanilla extract. With filling the cupcake pans 3/4 I got only 10.

    This is an easy recipe and the muffins are delicious! It doesn't say the quantity yield, but when I made them, I was able to fill exactly 12 standard muffin cups (filling with batter 3/4 full). Will definitely keep this recipe as a favorite!

    I was in the middle of making these when I realized that I didn't have any brown sugar for the crumb topping. They were still really good, though. I also made a few mods to the recipe. I reduced the sugar by 2-3 tablespoons, and I thought the sweetness level was perfect. (In fact, I would give this recipe 5 stars, but I think it would have been too sweet with a full cup of sugar.) I reduced the baking soda to 3/4 tsp because my kids won't eat anything if they can taste the baking soda. Did not have any problems with the muffins rising. I have a lactose allergy, so I used oil instead of butter, though I'm sure butter tastes better. Also, I added cinnamon, nutmeg, and ground cardamom to the batter. My husband loved the muffins, and he doesn't like bananas or anything banana flavored, so I think this recipe is a winner.

    Next time, I would like to play around with this recipe and maybe try adding pineapple or coconut -- or both!

    I made these in a mini loaves pan and it made only 8, but they are very very good. I will make again in fact they are better than my recipe for banana bread that I almost made. Thank you for sharing this recipe.

    This is a wonderful recipe. A few nights ago I made this into a bread and cooked a little longer. I also added chocolate chips. I can't thing of many other things that are better!
