White Bean Spinach Pasta Soup

2 teaspoonsolive oil
1 cloveGarlic
1 cupOnions; chopped
2/3 cupCarrots; finely chopped
1 packageFrozen spinach; thawed- 10 oz
4 cupsChicken broth
1 28-oz canDiced tomatoes
1 19-oz canWhite kidney beans
1 1/2 teaspoonsDried basil
1 Bay leaf
1/3 cupWhole wheat macaroni
Fresh parmesan cheese; shredded

White Bean Spinach Pasta Soup Preparation

Heat oil over medium heat and add garlic, onions and carrots. Cook until softened. Add everything except the macaroni. Cover and simmer for 15 minutes. Add macaroni and continue to cook for 10 minutes. Grate fresh parmesan on top before serving.

This soup was one of my favorites from this year. I just added a little chicken flavor powder for a little more flavor and partially cooked pasta for less starch in soup. EXCELLENT!!!

Hi KarenBee - Not sure how the Vegetarian tag got on this ... it certainly wasn't me! However, I have made it with vegetable stock instead and it is every bit as delicious.

I found this recipe browsing in the 'Vegetarian' category, and was surprised to see chicken broth as an ingredient, which means it is not vegetarian at all -- it still looks really good, and I plan to try it soon substituting vegetable broth.
