| 1 cupOnions; chopped | |
| 2/3 cupCarrots; finely chopped | |
| 1 packageFrozen spinach; thawed- 10 oz | |
| 4 cupsChicken broth | |
| 1 28-oz canDiced tomatoes | |
| 1 19-oz canWhite kidney beans | |
| 1 1/2 teaspoonsDried basil | |
| 1 Bay leaf | |
| 1/3 cupWhole wheat macaroni | |
| Fresh parmesan cheese; shredded |
White Bean Spinach Pasta Soup Preparation
Heat oil over medium heat and add garlic, onions and carrots. Cook until softened. Add everything except the macaroni. Cover and simmer for 15 minutes. Add macaroni and continue to cook for 10 minutes. Grate fresh parmesan on top before serving.
