Pizza with Whole-Wheat Couscous and Turkey Sausage
|1 12-ozWhole-wheat pizza crust, prebaked|
|1 tablespoonolive oil|
|1 6-ozTurkey sausage; italian seasoned, precooked; cut into 1/2-inch slices|
|1 mediumRed onion; sliced|
|1/3 cupWhole-wheat couscous|
|2 tablespoonsFresh Oregano; chopped|
|1/4 teaspoonBlack pepper|
|1/3 cupPizza or tomato sauce|
|1/2 cupFresh Basil; chopped|
|4 ouncesMozzarella cheese; grated|
|2 ouncesAsiago or Parmesan cheese; grated|
Pizza with Whole-Wheat Couscous and Turkey Sausage Preparation
1. Preheat oven to 400F.
2. Place pizza crust on a lightly oiled or nonstick baking sheet and set aside.
3. Warm olive oil in a saucepan, over medium heat. Add sausage and onions. Cook, stirring occasionally, until onions are softened, about 5 minutes.
4. Add couscous, water, oregano, salt and pepper. Cover and turn off heat. Let stand 5 minutes. Remove lid and fluff with a fork to seperate grains. Cool to room temperature.
5. Spread sauce evenly on pizza crust, then top with couscous and sausage mixture. Sprinkle with basil and cheese and bake until crust and cheeses are browned, about 15-20 minutes. Remove from oven and let stand 5 minutes before cutting into 8 slices.
