We enjoyed this dish. Lots of extra sauce. Will freeze it for the next time

1 cscallions; Chopped
4 Garlic
2 sprigsfresh thyme
1/4 tSalt
1/4 tFresh ground black pepper
2 THorseradish flavoured dijon mustard
1 Tolive oil; + 1tsp
1/2 cChicken broth
1 10-ozpork tenderloin

Mustard Crusted Pork Tenderloin Preparation

1. Preheat oven to 350F. 2. In a food processor, combine scallions, garlic, thyme, salt and pepper; process until finely chopped. Add mustard and oil; process until mixture forms a paste. 3. Place pork on a rack in roasting pan; spread with scallion mixture Pour broth into bottom of pan. Roast, basting occasionally, 45-50 minutes, or until meat thermometer registers 160F. Let stand 10 min. before carving into 1/4" thick slices. Source: Weight Watchers Magazine, April 1993 Each serving contains: 1 fat, 2 proteins, 1/2 vegetables, 2 opt.cal. Per serving: 143 calories

Turned out very flavorful! I loved the bite of the mustard sauce with all the garlic. I put the roast on a broiler pan and put chicken broth in the bottom. It made the pork so moist! Great idea for roasting any meat.

I thought the sauce was missing something, perhaps some sweetness, fruitiness, etc. Also, the idea of using a roasting pan w/broth at the bottom was unclear to me so I just put the tenderloin in a baking dish, topped it w/sauce
