Ready in 20 minutes
This one-dish meal is simple to prepare and delicious.
"Made it last night -- it was great. Two changes I made were to use a full cup of wine and a full pound of pasta, so that there'd be more sauce left over in the bowls after the pasta is eaten, which we then mopped up with bread. Our guests loved it, and it was quick and easy."- patrickmarr

Scrub mussels and remove beards.
Melt butter in a large pot over medium heat. Add onion, garlic and bay leaf and saute for about 3 minutes. Add tomato, salt and spinach - cover and cook for 4 minutes, stirring once. Add wine and mussels and bring to a boil. Cover and cook until mussels open (about 5 minutes). Discard any mussels that don't open. Stir to combine tomato/spinach sauce with mussels.
Meanwhile, prepare spaghetti according to package directions. Serve mussels and sauce over spaghetti. Serve with a bit of fresh grated parmesan.

Krinj 2 years agoWe loved this dish. It's very simple and delicious. What we did different is that we added a lil bit of heavy cream and added the spinach after the mussels have been fully cooked bc it cooks right away.
Jonnybazuka 3 years agoMake sure you add a big dollop of cream - otherwise very nice!!
Justine8186 3 years agoVery easy, quick and healthy. I will add a few more ounces of pasta the next time I make it.

MigsVuitton 3 years agoThis was so easy to make and it turned out just like I'd expect a nice restaurant dish to taste. Easily, 5 stars. Note, I also added some heavy cream that was mentioned prior.
aplus808 4 years agoStarted with a couple rashers of bacon to begin with and also added a bit of heavy cream near the end for an amazing meal.
mjensen 4 years agoThanks Susan, great recipe! I made this recipe tonight and my partner and I both absolutely loved it. However, instead of spaghetti I put in Udon noodles at the same time as the mussels, used tinned plum tomatoes and added half a cup of single cream and some pepper - yum!
