Ingredients

1 1/2 tablespoons Butter
1 cup Onion; finely chopped
2 cloves Garlic; minced
1 Bay leaf
2 cups Tomato; diced
1/2 teaspoons Salt
1 10-oz package Fresh spinach
1/2 cup White wine
2 pounds Mussels
1/2 pounds Spaghetti; uncooked

Preparation

Scrub mussels and remove beards.

Melt butter in a large pot over medium heat. Add onion, garlic and bay leaf and saute for about 3 minutes. Add tomato, salt and spinach - cover and cook for 4 minutes, stirring once. Add wine and mussels and bring to a boil. Cover and cook until mussels open (about 5 minutes). Discard any mussels that don't open. Stir to combine tomato/spinach sauce with mussels.

Meanwhile, prepare spaghetti according to package directions. Serve mussels and sauce over spaghetti. Serve with a bit of fresh grated parmesan.

Excellent meal. I doubled the recipe and added extra wine. Subbed olive oil for butter. Delicious!

We loved this dish. It's very simple and delicious. What we did different is that we added a lil bit of heavy cream and added the spinach after the mussels have been fully cooked bc it cooks right away.

Make sure you add a big dollop of cream - otherwise very nice!!

This was so easy to make and it turned out just like I'd expect a nice restaurant dish to taste. Easily, 5 stars. Note, I also added some heavy cream that was mentioned prior.

Started with a couple rashers of bacon to begin with and also added a bit of heavy cream near the end for an amazing meal.

Thanks Susan, great recipe! I made this recipe tonight and my partner and I both absolutely loved it. However, instead of spaghetti I put in Udon noodles at the same time as the mussels, used tinned plum tomatoes and added half a cup of single cream and some pepper - yum!
