| 1 teaspoonolive oil |
| 1 cupOnions; sliced |
| 1 teaspoonGarlic; minced |
| 1/2 cupCelery; diced |
| 1/2 cupGreen bell pepper; sliced |
| 1/2 cupRed bell pepper; sliced |
| 1/2 teaspoonJalapeno peppers; or serrano pepper, diced |
| 1/4 teaspoonThyme |
| 1 eaBay leaf |
| 1 pinchCayenne; or red chili flakes |
| 1/4 cupCilantro; fresh minced |
| 1/2 cupTomato; diced with juice |
| 1/3 cupRipe olives; sliced |
| 1 1/2 cupChicken Stock |
| Salt; to taste |
| Pepper; to taste |
Vera Cruz Sauce Preparation
Heat olive oil in a sauce pan over medium heat. Add onions, garlic, celery, and peppers, saute for 3 - 4 minutes. Add thyme, bay leaf, red chili flakes, cilantro, tomatoes and olives. Continue to saute for 3 minutes. Add chicken stock and bring to a simmer. Reduce heat and simmer over low heat for 20 - 25 minutes, stirring occasionally, Season with salt and pepper.
