Tender marinated pork with tangy-sweet pineapple creates a delicious low-fat dish

1 poundPork Tenderloin; - or boneless chops
1 tablespoonSoy sauce; - low sodium
2 teaspoonsDry sherry
1 teaspoonWhite wine vinegar
1 cupFresh Pineapple; diced
4 Green onions
3 clovesGarlic
1 teaspoonFresh Ginger
Cooking Spray; as required

Pork - Pineapple Quick Fry Preparation

Mix together the soy sauce, vinegar, and sherry in a large bowl.

Remove all visible fat from the pork then slice across the grain into 1/4 inch slices. Place the pork in the bowl and stir to assure all pieces are wet. Set aside for at least 15 minutes while preparing the rest of the dish.

While the pork is marinating, finely chop the garlic and ginger. Thinly slice the onions, separating the green from the white portions. Cut the pineapple into thin, (small bite-size) pieces.

With everything prepped and at hand, heat a wok or deep frying pan (sprayed very lightly with oil) until it's not quite smoking. Quick fry the ginger in the pan followed in 1 minute by the whites of the opnions, About a minute later add the garlic. . As the garlic lightly bowns and other other items soften pull the pork from the marinade with a slotted spoon and add it to the pan. Stir this mixture gently while the pork cooks. When it's starting to turn brown around the edges of the pork, add the pineapple and reduce the heat. The pineapple will heat through and start to caramelize. That's when you serve the dish alongside (or over if you wish) hot steamed rice, garnished with the green onion slices.

Notes

The original recipe called for sliced pears. Thinly sliced tart apples would also work in this dish. I served it with some Indian Lemon Rice and 100% of the diners liked the dish.

My family loves this recipe! We've been trying new recipes since January and we've made this dish more than a few times. It tastes the best with fresh pineapple and green onions, however, we've also tried it with canned pineapple and without the green onions at different times. I love that I don't have to marinade the pork very long.

A bit dry I added some chili into it to spice it up. Next time a little more Ginger and garlic pineapple juice might add to the flavour I added some sliced onions to this as well and added the basic sauce as I cooked as pork needs moisture.i might tenderize the pork by pounding lightly

The pineapple, garlic, and fresh ginger give this dish great flavor. It cooked up almost dry for me, with nothing to soak into the rice. When I fix it next time, I think I'll add some pineapple juice toward the end of the cooking time. It should also be good with chicken instead of pork.

This is a tasty recipe to use when you don't have a lot of time to get dinner on the table. My 4 year old daughter loved it. Next time I make it I'm going to try it with apples instead of Pineapple.
