Cheese and Bran Muffins
|2 1/2 cupsWhole-wheat flour|
|1/2 cupBran flakes|
|1 tspBaking Powder|
|1 tspBlack Pepper; freshly ground|
|1 tspfresh rosemary; finely chopped|
|200 gUnsalted butter|
|2 mediumonions; chopped and sauted in olive oil|
|1/2 cupParmesan cheese; grated|
|1 cupcottage cheese|
|1 tbspfresh basil; chopped|
Cheese and Bran Muffins Preparation
1.- Preheat Oven to 180 degrees C and grease 12 muffin cups or use muffin papers.
2.- Mix all the dry ingredients into a large bowl.
3.- Add softened butter by hand until you have a bread-crumb consistency.
4.- In a separate bowl whisk eggs, buttermilk and herbs before folding the cheeses and cooled sauted onions.
5.- Fold this wet mixture into the dry ingredients.
6.- Spoon this mix into muffin cups and bake for 35 - 40 minutes or until a toothpick comes out clean.
7.- Cool on wire rack and serve them warm.
