Cheese and Bran Muffins

| 2 1/2 cupsWhole-wheat flour |
| 1/2 cupBran flakes |
| 1 tspBaking Powder |
| 1 tspSalt |
| 1 tspBlack Pepper; freshly ground |
| 1 tspfresh rosemary; finely chopped |
| 200 gUnsalted butter |
| 3 wholeEggs |
| 1 cupButtermilk |
| 2 mediumonions; chopped and sauted in olive oil |
| 1/2 cupParmesan cheese; grated |
| 1 cupcottage cheese |
| 1 tbspfresh basil; chopped |
Cheese and Bran Muffins Preparation
1.- Preheat Oven to 180 degrees C and grease 12 muffin cups or use muffin papers.
2.- Mix all the dry ingredients into a large bowl.
3.- Add softened butter by hand until you have a bread-crumb consistency.
4.- In a separate bowl whisk eggs, buttermilk and herbs before folding the cheeses and cooled sauted onions.
5.- Fold this wet mixture into the dry ingredients.
6.- Spoon this mix into muffin cups and bake for 35 - 40 minutes or until a toothpick comes out clean.
7.- Cool on wire rack and serve them warm.
