Roast garlic in 350 ovens for about 40 minutes, covered with foil.
Bring large pot of water to boiling. Add 1 tablespoon. salt. Boil cauliflower for about 7-10 minutes or until completely cooked through but not mushy. Drain well.
In food processor or blender, add drained cauliflower and remaining ingredients. Puree.
The potato flakes give it just enough of that "potato" flavor to make it nice without adding too many carbs or calories. Some people like to start out with more potato flakes and cut back in successive recipes as they (or their families) get used to the flavors.

erika_lynn_irizarry 5 months agoThese were delicious! My husband had no idea they were actually cauliflower and wants these instead of mashed potatoes from now on! I didn't have to add the flakes either - they were perfect without!
dharmon10 9 months agoI could definitely tell this was cauliflower. The consistency was a little runny for my taste (I even added less milk) I'll try it again but I'll take others suggestions of steaming not boiling and adding some real potatoes for better texture.

katalia369 3 years agoA good alternative to the all carbs indeed. I like it, my family liked it, and I used powdered milk to thicken and a creamer base to it. Worked well.

shirleyss 3 years agoDo NOT boil for this recipe . Cauliflower is like a sponge . I only ever steam ours for about 10 min. Try coarsely chopping in a FP and lightly stir fry or nuke until just tender . You will have a much more flavorful and drier consistency. Cheers
