Original recipe makes 18
1/2 cupegg substitute
6 tablespoonsWhole-wheat flour
10 ounceschopped spinach; thawed (frozen)
2 cupscottage cheese; low-fat
2 cupsCheddar cheese; reduced-fat
1/2 teaspoonFresh ground black pepper
1/8 teaspoonCayenne pepper
1 pinchNutmeg
3 tablespoonsWheat germ

Spinach and Cheese Squares Preparation

1 In a large bowl beat the eggs with the flour until the mixture is smooth.

2 Add the spinach, cheeses, cayenne and nutmeg, and mix the ingredients well. Pour mixture into a nonstick coated 13x9x2 -inch baking pan.

3 Sprinkle the top with wheat germ and bake at 350 degrees F. for about 45 minutes.

4 Let stand for about 10 minutes and then cut into 1-1/2-inch squares for serving.
