This can be a fabulous main dish or a breaksfast and it's really easy to make!

| 1 tablespoonolive oil |
| 1 clovegarlic; finely chopped |
| 1 largeonion; finely chopped |
| 1 red pepper; chopped |
| 2 tablespoontomato pure |
| 4 Eggs; lightly beaten |
| 1 tablespoonPaprika |
| 1 teaspoonSalt |
| pepper; to taste |
| 1/2 cupCottage cheese |
| 1/2 cupParmesan cheese |
| 2 teaspoonsfresh basil chopped |
| 1 sheetpuff pastry |
Diana's Fritatta Preparation
1.- Preheat oven to 200 Deg C and line a baking dish of 11 in x 7 in x 1.5 in with baking paper.
2,- Cook the potatos in a saucepan with water to cover them, just until tender.
3.- Saute the onion and the garlic in frying pan and add the red pepper and cook until soft, then add the zuccini, the drained potatos and basil and cook for another three minutes.
3.- In a separate bowl combine the eggs lightly beaten, the paprika, tomato pure, cheeses, salt and pepper and whisk all, then add the potato mixture and toss everything until well covered with the egg.
4.- Spread the egg mixture into baking dish. Cut the sheet of puff pastry to fit the baking dish and place it on top of the egg mixture. Brush the pastry with a beaten egg.
5.- Bake for 30 minutes, let it cool for 10 minutes and cut into slices or squares.
