This tender pot roast is delicious and easy to prepare with convenient envelopes of salad dressing and gravy mixes.

The info below is not correct about the gravy packets.

My brown gravy packet is 12 grams per package which is 1 gram per serving. The Ranch is 16 grams per package which is 1.25 grams per serving, and the Italian dressing is 8 grams per package which is about .75 grams per serving.

Therefore it's about 2 grams of carbohydrates per serving.

2 lbsBoneless beef chuck roasts; (up to 2 1/2 pounds)
1 envelopeRanch salad dressing mix
1 envelopeItalian salad dressing mix
1 envelopeBrown gravy mix
1/2 cupWater

Flavorful Pot Roast Preparation

Place the chuck roasts in a 5-qt. slow cooker. In a small bowl, combine the salad dressing and gravy mixes; stir in water. Pour over meat. Cover and cook on low 7-8 hours or until tender. If desired, thicken cooking juices for gravy.

GRAVY

Remove meat to a warm platter, then strain and skim the fat from the cooking juices. Measure the juices and place in a saucepan. Combine 3 tablespoons flour and 1/3 cup cold water for each cup juices, then add to saucepan. Bring the mixture to a boil, stirring constantly, until the gravy is thickened.

The nutritional database says that a package of brown gravy mix will provide 23g carbs for each of the 12 servings this recipe yields. The salad dressing mixes are likely to provide substantial additional carbs. Please, how is this recipe either Atkins friendly or low carb?
