Erincpeters , 1 months agoThis was awesome! We added chopped spinach and mushrooms, and wound up having to double the sauce. So we ended up with several pans for the freezer. I hope they're as good the second time around!
carlsonrodriguez , 1 months agoThese went over perfectly with my crowd. Made it for the in laws, a success. Tried it for my sons birthday and I had to make more. :)

amijojcpo , 2 months agoVery good. I use black beans instead of olives and to lighten up a bit used 98% fat free soup, and Greek yogurt instead of sour cream. Taste the same. We also use lower fat cheeses We make two bowls and add cheese to both stuffing and topping. You can also add jalapeños.

tlbarker72 , 6 months agoPretty good. I thought the sauce was a little bland so I added some cumin. But these enchiladas are so creamy and yummy. Will definitely make again.

arielasylum , 8 months agoI've made this recipe several times adding different ingredients for flavor. I've made them spicy and not, and every time (with men in the house) it's like a War over the leftovers. I made three full pans once, and they lasted until the next evening, and that was it. Love it!

pauldean1 , 8 months agoAn easy allrounder!! I cater to two lots of kids - mine love spicy foods so the recipe above is one of their favourites, my girlfriend's kids have softer tastes so I make it without the chilli and add smoked paprika instead to give it some flavour and they like it that way. Served with Mexican Rice that is also on Big Oven!!
Jeanwgriffin , 9 months agoYummy! A family favorite. I used one can of soup and reduced the milk. Served with black beans and brown rice.
