Blech. Bland. We love enchiladas. 5 kids…not one of them liked this. Probably bc of cream of chicken soup and no spices except for the chilis. Never like recipes that call for canned soup in the mix. Only picked this recipe because my kids love mexican food and I wanted something easy for my kids to help me make.
This was great! I also added enchilada sauce to the chicken soup sauce and prepared as directed on the package. Next time I'll add more green chillies and maybe some pepper flakes to give it more spicy
Very good. I use black beans instead of olives and to lighten up a bit used 98% fat free soup, and Greek yogurt instead of sour cream. Taste the same. We also use lower fat cheeses We make two bowls and add cheese to both stuffing and topping. You can also add jalapeños.
I've made this recipe several times adding different ingredients for flavor. I've made them spicy and not, and every time (with men in the house) it's like a War over the leftovers. I made three full pans once, and they lasted until the next evening, and that was it. Love it!
