Very good. I use black beans instead of olives and to lighten up a bit used 98% fat free soup, and Greek yogurt instead of sour cream. Taste the same. We also use lower fat cheeses We make two bowls and add cheese to both stuffing and topping. You can also add jalapeños.


I've made this 3 Times now including today... excellent!

Pretty good. I thought the sauce was a little bland so I added some cumin. But these enchiladas are so creamy and yummy. Will definitely make again.

Put dice tomatoes instead of olives

It was easy to make, but a little salty for my taste.

very very nice have you tryed putting breadcrumbs on the top when you baked it for extra crispyness
