Original recipe makes 4
1 poundExtra-lean ground beef; browned
1 largeOnion; thinly sliced
1 Green pepper; diced
1 Tomato; peeled and diced
1 Apple; peeled, cored, and diced
2 teaspoonCurry; or more
4 cupsRice; prepared

African Beef Curry Preparation

1. Spray slow cooker with fat-free cooking spray.

2. Add all ingredients except rice in slow cooker and mix well.

3. Cover and cook on high 6-8 hours.

4. Serve over hot rice.

Notes

A bit bland. Would add more spice if I cooked again.

I am in the process of cooking this now, and my recipe (from a slow cooker cookbook) suggested adding a can of tomato paste to this--I didn't have any, so I added 4 oz. of tomato sauce.

I diced the onion. This did not break down as much as I thought it would and I am sure the green pepper I used was so strong that it over powered everythig else. I would suggest tasting the green pepper before adding it.
