Original recipe makes 10
3 cupsSweet potatoes; mashed
1 cupSugar
1/2 teaspoonSalt
2 Eggs; lightly beaten
1/3 stickButter; melted
1/2 cupmilk
1 teaspoonVanilla
Topping
1/3 stickButter; melted
1 cupBrown sugar
1/3 cupFlour
1 cupPecans; chopped

Sweet Potato Souffle Preparation

Mix all ingredients together. Pour into a greased baking dish (6 quart, 13x9, etc). Cover with topping and bake for 35 minutes at 350.

I made this for Thanksgiving this year and it was very good. Next time I would put it in a deeper dish so that the sweet topping would not over power the sweet potates.
