| 4 Chicken leg quarters; - skin & fat removed |
| 1 tablespoonolive oil |
| 1 largeLemon; - Zested & juiced |
| 4 clovesGarlic; - crushed |
| 1 tablespoonSoy sauce; - low sodium is fine |
| 1/4 teaspoonKosher salt |
| 1/2 teaspoonBlack pepper; - fresh ground |
Lemon-Garlic Chicken Preparation
Preheat oven to 350F.
Disjoint drumsticks from thighs. Place oil in pan and saute' chicken until browned.
Place a sheet of foil in a backing tray. Place chicken in center and season with salt & pepper.
In a separate bowl mix lemon juice, zest, garlic, and soy sauce. Pour this evenly over the ckicken and wrap up the foil to make a sealed package.
Bake the package for 1 hour at 350. Open at table and serve with rice or other side-dish.
