Preheat oven to 350F.
Disjoint drumsticks from thighs. Place oil in pan and saute' chicken until browned.
Place a sheet of foil in a backing tray. Place chicken in center and season with salt & pepper.
In a separate bowl mix lemon juice, zest, garlic, and soy sauce. Pour this evenly over the ckicken and wrap up the foil to make a sealed package.
Bake the package for 1 hour at 350. Open at table and serve with rice or other side-dish.

DrgnHrt 1 year agoI used chicken breasts, and added about 1/4 cup of champagne to the marinade. It was phenomenal! Definitely be eating again.

jerryfauls 5 years agoSubstituted lemon juice for actual lemons, added some lemon pepper...turned out very well. Very juicy and flavorful. Served with rice and a fresh salad.
