This cream of mushroom soup recipe is so much better than the canned, condensed version. It's worth the effort to make it from scratch.
"This is a great jumping off point for mushroom soup! I added a couple small diced red potatoes because I didn't have a full pound of mushrooms. I also added a little onion and minced garlic. I blended about 3/4 of the soup before adding milk. Since I didn't have cream I used Vitamin D milk and a little sour cream. We loved it. Thank you!"- Mollymcferren

Wash mushrooms and chop coarsely.Heat the butter in a 3 quart saucepan. Saute the mushrooms about 5 minutes. Sprinkle the flour over to coat. Add the broth gradually, stirring constantly. Add the parsley and sherry. Bring to a boil. Remove from the heat and stir in the cream. (You may whirl in a blender at this point for a smoother texture, Some prefer just to leave as is).
This is great when your feeling a bit "down" and want some warm "comfort food".

Susanisham 7 months agoI cooked the flour well with the mushrooms, helps with the consistency, I also added sweet onion with the mushroom sauté. Pepper, & small amount of worcestershire sauce really brings a nice flavor.

Cookin4younme 1 year agoDo not wash the mushrooms, clean with a damp sponge or paper towel... Washing will add extra water to your soup.
rsearer 1 year agoI screwed up and forgot to buy chicken broth, so I used beef broth instead, recipe still turned out delicious. Can't wait to try again the correct way!

Elizabethd002 1 year agoI did not enjoy the soup. My boyfriend did however. Something about the taste and the flour. I did not use sherry. I will try again, possibly my error. I might add sour cream, more mushrooms, and better stock. But I like a lot of the recipes posted by this chef. Thanks.

bigduke06 1 year agoIt was a little thin for my liking. The second time I made it I mixed some of the mushroom liquid with a couple of tablespoons of flour and then added it back in with the cream, then let it simmer for bit. Delicious!!!!
