4 tablespoonsButter
4 tablespoonsFlour
3 cupsmilk
3/4 cupDark beer
1 tablespoonGarlic; minced
Salt; to taste
Black pepper; to taste
1 teaspoonRed chiles; chopped
2 cupsTillamook Cheddar Cheese; sharp or extra sharp, shredded

Tillamook Cheddar Beer Soup Preparation

Heat butter in a saute' pan. Add flour and cook on low heat. Stir mixture until it starts to bubble; do not allow to brown. Remove from heat and set aside.

Heat milk in sauce pan until just ready to boil. Add garlic, salt, pepper and crushed chiles. Stir mixture until just before boiling. Add half the flour/butter mixture (Roux) and stir with a wire whisk until at a low simmer. Additional Roux may be added to thicken. Stir constantly to avoid burning.

Reduce heat and add cheese and beer. Stir until cheese melted. Texture should be smooth to the touch.

May be reheated on low temp (do not boil).

This soup went over SO well last night! The pickiest eater in the house drank the last of it out of his bowl. One thing I did a little different: I fried the garlic and pepper until fragrant. Also, we served it with with bread, tortilla chips and cheddar twills. A+ recipe! Everyone who loves Tillamook should try this.

We enjoyed this soup tonight, and used up aged cheddar and some leftover steamed broccoli in it. I recommend cooking the roux a little longer than is described in the directions -- otherwise the soup may be a bit grainy.
