| 200 gcarrots; julienned |
| 250 gdaikon radishes; julienned |
| 1 Green onion; chopped |
| DRESSING |
| 1 tablespoonmirin |
| 3 tablespoonsRice vinegar |
| 2 teaspoonsSugar |
| 2 teaspoonsPeanut oil |
| 1 teaspoonSesame oil |
Daikon and Carrot Salad Preparation
Put vinegar, mirin, and sugar together in a small bowl and stir until sugar dissolves. Add peanut and sesame oils and blend well.
Place carrots and daikon in a colander and sprinkle with salt. Let stand for 15 minutes or until limp. Transfer to a bowl and toss with chopped green onion and dressing. Taste for salt and add more if needed.
Marinate for at least 10 minutes and serve chilled.
