Original recipe makes 3
200 gcarrots; julienned
250 gdaikon radishes; julienned
1 Green onion; chopped
DRESSING
1 tablespoonmirin
3 tablespoonsRice vinegar
2 teaspoonsSugar
2 teaspoonsPeanut oil
1 teaspoonSesame oil

Daikon and Carrot Salad Preparation

Put vinegar, mirin, and sugar together in a small bowl and stir until sugar dissolves. Add peanut and sesame oils and blend well.

Place carrots and daikon in a colander and sprinkle with salt. Let stand for 15 minutes or until limp. Transfer to a bowl and toss with chopped green onion and dressing. Taste for salt and add more if needed.

Marinate for at least 10 minutes and serve chilled.
