Tangy and sweet sauce tops layers of chicken and mushrooms. Failed recipe turned into Musgovian delight.
Place raisins and vinegar in a bowl. Allow to soak for 15 minutes (or microwave for about a minute and soak for 3 minutes). The raisins should "plump up" and soften.
In the work bowl of a food processor add the softened raisins, onion, EVOO, garlic, and pine nuts. Process the mixture to a coarse paste. Thin with additional vinegar if needed.
Pre-heat oven to 350F.
In a casserole pan place a layer of mushrooms topped with a layer of chicken. Spread the raisin mixture over the top. Sprinkle a few raisins and nuts on top. Cover and bake for 20-30 minutes.
Serve over rice or shredded cauliflower.

"Musgovian" is when you look the the refrigerator and say, "This mus' go, and that mus' go".
I came up with this while experimenting with an herb-fruit spread recipe. The spread wasn't very good but it made a great topping to a "Musgovian" chicken dish.
